Osmanlı İmparatorluğu’nda İstanbul’un iaşesi iktisadi ve siyasi açıdan önemli bir konu olmuştur. İmparatorluk yönetimi iaşe konusunu piyasaya bırakmamış, gerektiğinde piyasaya müdahale etme yolunu seçmiştir. Bu gerçek 18. Y.y.’da da değişmemiş, Devlet 18. Y.y. boyunca iaşe sorunlarının çözümü için üretim ve dağıtım ile ilgili tüm birimlerini seferber etmiştir. Çalışmada, İstanbul ahkâm defterleri İstanbul Esnaf Tarihi 2 isimli eserde yer alan; 18. The sustenance of İstanbul is an important matter from economic and political angle in Ottoman Empire.
